Roasted Romanesco & Smoked Paprika Butternut Squash Salad

Does anyone else get as much happiness from eating fractal broccoli? 
Roasted Romanesco & Smoked Paprika Butternut Squash Kale Salad with a Lime-Tahini dressing 🌿
[Serves 1-2]

For the squash:
1 butternut squash
3 T avocado oil
2 tsp smoked paprika 

For the salad:
1 head romanesco
1 T ghee
handful of kale
1 lime
1 tsp salt
toppings of choice: microgreens, sunflower seeds, chickpeas, sauerkraut

For the dressing:
1/4 cup tahini
3 T veganaise
2 T nutritional yeast
1 T apple cider vinegar
1 tsp garlic salt
pepper to taste  


1. Cut butternut squash in half, roast with avocado oil + smoked paprika. 
2. Steam romanesco, then roast or pan fry in ghee
3. Massage kale with lime juice and salt
4. Dressing: Mix tahini, soy-free vegenaise, nutritional yeast, apple cider vinegar, garlic salt and pepper. 
5. Add additional toppings
